This mug cake is faster than Magriza spreading Sunday gossip at the gate!

Ingredients
- 1 fresh Lemon zest and juice
- 2.5 Tbsp HEBA® Supa-Seed Flour
- 2 Tbsp Sweetener of Choice
- 1/4 tsp Baking Powder
- 1 Jumbo Egg
Instructions
Lemon Cake
- Sprinkle the zest and 2 tbsp lemon juice into a ramekin or small mug
- Add HEBA®, egg and 1 Tbsp sweetener, mix to combine
- Add the baking powder and mix again
- Microwave on high for around 1 minute 30 seconds
Lemon Drizzle
- While the cake is in the microwave, use a coffee grinder to make powdered icing sugar from your remaining sweetener.
- Slowly add the lemon juice until the desired consistency is reached
- Remove the lemon cake from the microwave
- Drizzle over and enjoy!
