Lemon Drizzle Microwave Cake

- 1 fresh Lemon zest and juice
- 2.5 Tbsp HEBA® Supa-Seed Flour
- 2 Tbsp Sweetener of Choice
- 1/4 tsp Baking Powder
- 1 Jumbo Egg
Lemon Cake
Sprinkle the zest and 2 tbsp lemon juice into a ramekin or small mug
Add HEBA®, egg and 1 Tbsp sweetener, mix to combine
Add the baking powder and mix again
Microwave on high for around 1 minute 30 seconds
Lemon Drizzle
While the cake is in the microwave, use a coffee grinder to make powdered icing sugar from your remaining sweetener.
Slowly add the lemon juice until the desired consistency is reached
Remove the lemon cake from the microwave
Drizzle over and enjoy!
