Lemon Drizzle Microwave Cake

Ingredients 

  • 1 fresh Lemon zest and juice
  • 2.5 Tbsp HEBA® Supa-Seed Flour
  • 2 Tbsp Sweetener of Choice
  • 1/4 tsp Baking Powder
  • 1 Jumbo Egg

Instructions

Lemon Cake

  • Sprinkle the zest and 2 tbsp lemon juice into a ramekin or small mug
  • Add HEBA®, egg and 1 Tbsp sweetener, mix to combine
  • Add the baking powder and mix again
  • Microwave on high for around 1 minute 30 seconds

Lemon Drizzle

  • While the cake is in the microwave, use a coffee grinder to make powdered icing sugar from your remaining sweetener.
  • Slowly add the lemon juice until the desired consistency is reached
  • Remove the lemon cake from the microwave
  • Drizzle over and enjoy!
