HEBA Cheesy Meatball Bites are a delicious low-carb canapés idea for Christmas lunch!

Recipe:
500g beef mince
1 tbsp minced garlic
2 tsp dried oregano
1 tsp coriander seeds
Salt and pepper to taste
1 egg
2 tbsp HEBA
250g cream cheese

Method:
In a bowl, mix together all ingredients except for the cream cheese until well combined.
Roll the meat into balls and use your finger to hollow out the center and stuff with cream cheese. Alternatively you can make meatball discs , place a little dollop of cream cheese in the center and then fold the meat around it to form a ball.
Heat some oil in a frying pan and fry to brown on all sides.

It's almost time for the holidays! There's nothing like a slightly later start to the day, and indulging in a rusk with tea or coffee in bed ❤❤ Our go-to HEBA rusk recipe is incredibly crunchy yet still low-carb. Check it out below!

Ingredients
DRY
1 packet (200g) Heba
⅓ cup mixed seeds
¼ tsp Himalayan salt
3 tsp baking powder
4 Tbsps xylitol

WET
4 eggs
2 tsp vanilla essence
1 ½ cup milk or dairy-free milk alternative
½ cup coconut milk
2 Tbsps apple cider vinegar

Method

Preheat the oven to 180'C and line a baking tin with parchment paper.
Add the milk, coconut milk and apple cider vinegar into a medium bowl. Mix and set aside for 5 minutes. ( separation is normal)
In a separate mixing bowl combine all the dry ingredients.
Mix the eggs and vanilla essence into the milk mixture and then add the wet mixture to the dry mixture and combine.
Pour into prepared baking tin and transfer to the oven. Bake for 60 minutes or until a toothpick comes out clean.
Let it cool down completely before taking out of tin by pulling on parchment paper.
Cut into rusks and transfer to tray, leaving enough space between all the rusks.
Set the oven to fan mode on 110'C and dry out the rusks for 6-7 hours . Once you take them out they might seem a little chewy in the center still, but once they cool down completely they get crispier.
Store in air-tight container with a lid.

HEBA Beach Rolls
Ingredients:
100g Heba Pap
2 tsp Baking Powder
2 tbs Psyllium Husk
1 tsp salt
3 egg whites
2.5 tbs Apple Cider Vinegar
250ml boiling water

Line a baking tray with baking paper.
In a bowl, mix together dry ingredients until well combined.
Add egg whites and Apple Cider Vinegar and mix.
Slowly add the boiling water, bit by bit - do not over

Divide the dough into 4 and shape into a round disk and place on the baking sheet - then into the oven while dough still warm.
Bake for 45 minutes, remove from oven and allow to cool completely before handling.
Enjoy!
