Preheat the Oven

  • Set your oven to 145°C and line a baking tray with baking paper.

Cream the Butter and Sweetener

  • In a mixing bowl, cream together the softened butter and sweetener until light and fluffy.

Combine Dry Ingredients

  • In a separate bowl, whisk together the HEBA®, whey protein, ground ginger, cinnamon, and any other spices you're using.

Form the Dough

  • Gradually mix the dry ingredients into the butter mixture until well combined. Add the water a little at a time until a soft, pliable dough forms.

Chill the Dough

  • Wrap the dough in cling film and place it in the freezer for 10 minutes to firm up — this makes rolling and cutting easier.

Roll the Dough

  • Place the chilled dough between two sheets of baking paper. Roll it out evenly to a thickness of about 1cm thickness.

Cut and Shape

  • Use cookie cutters to shape your biscuits, then carefully transfer them onto the lined baking tray.

Bake

  • Bake in the preheated oven for approximately 10 minutes, or until the edges are lightly browned.

Cool Completely

  • Remove from the oven and let the biscuits cool completely on the tray — they will firm up and crisp as they cool.

Serve and Enjoy

  • Perfect with a glass of milk, rooibos tea, or on their own as a guilt-free treat.
